The city is profitable in the traditional production of jaggery and provides a profitable market that ensures continuous running.

Uttar Pradesh is the biggest producer of sugar in the country. And this makes it the biggest consumer of jaggery and sugarcane products. 


Following are the factors that make this location a prime factory site for our organization:

  • Being near the sugarcane farms makes it easy to get the best raw materials. 
  • It also reduces transportation costs.
  • Fresh products make the local potential market proximate. 
  • Logistics of raw materials and products is easy.
  • Man-power is easily available near the site.
  • Fulfillment of government guidelines and regulations of food processing.
  • Attaining utilities at minimum cost from the local market.
  • Uttar Pradesh is shaping itself as the biggest social and cultural market in India.


Being on a prime location near the sugarcane farm gave us an opportunity to start collaborative farming and even manufacturing with the experienced farmers of the area. 


This collaborative approach and interactive farming are also making the farmers confident. 


Traditionally, jaggery is produced near or in the sugarcane farm in a small vent or hut. It is a low-scale or household production that does not give a commercial return to the farmer. 


But we are bringing a change in the local culture.


How jaggery is made traditionally

Tiny size jaggery production is done in the farms themselves. Sugarcane is alive till it is crushed. Hence fresh sugarcane is crushed in the farm itself to cut the cost of transportation and marketing. 


Also, the revenue generated by selling jaggery is not enough to invest in it. The crushed trash and the roots are completely waste for the farmer, so that is also hectic for a farmer.


Jaggery should be made from filtered, purified, clean, unfermented juice of mature sugarcane stalk. 


Jaggery is basically the crystallized sugar cane juice. Jaggery benefits over sugar make it healthier and easy to digest.

The general requirements while making jaggery are set on a high standard:

  • Jaggery should be free from any foreign element like sand, metal, or waste.

  • Only food-grade additives must be used during manufacturing.

Use of jaggery

Jaggery is the most ancient and the most widely consumed sugarcane product. Let's see how it is used in other ways:

  • A thick syrup of jaggery (kakvi) is consumed with chapatis
  • Added into many dishes to balance the taste

Packaging and Labelling 

1. Food Additives

Only permitted additives and chemical agents should be used and their quantity should also be used within permissible limits.


2. Packaging

  •  Sugar cane Jaggery should be packaged in food-grade material which guarantees the safety and integrity of the product.
  • The weight of each package must comply with weight and measurement legislation and the legal metrology of the partner state.


3. Labelling

The following should be legibly and indelibly marked on each package:-

  • List of ingredients
  • Nutritional content
  • Name of the product as sugar cane Jaggery
  • Name & Address of the manufacturer/importer and packer
  • Brand/Trade name
  • Batch or code number
  • Net weight in gm or kg
  • Storage instructions
  • Date of manufacture
  • Best before
  • Instructions for use
  • Instructions on disposal of used package
  • List of ingredients 


India has seen deteriorating conditions of the sugar mills in the past and present decade despite several supports and remedies extended by the Govt. 

This has led to a decrease in the quality of life for an average sugarcane farmer in many states of India like Maharashtra, Uttar Pradesh, Tamil Nadu, Bihar, etc. 

This project will not only help the farmer to come back on his feet and become independent but in turn, other villagers will also try to follow the same model for the development of their villages and attain self-reliance.
